Am I the only person that has a hard time doing this? I am terrible about throwing things together at last minute and causing undue stress on myself. I know that if I'd just do it, I'd feel so much better!
This week, I buckled down and made my menu plan again. We were set to be home almost every evening, so I was planning on making things that take a little longer and can't be eaten on the run. Then, I found out we have football camp every evening this week.
I'm going to try to stick to it, luckily most of it is casserole type dishes that can be reheated easily.
Here's the week's plan:
Lasagna
Sweet & Sour Chicken
Chicken and Biscuits
Breakfast for Dinner
We have get togethers and dinners Friday-Sunday, so we only need 4 meals this week.
Do you guys menu plan? How are you able to adapt it to a busy schedule?

I actually do... though, I've done a horrible job this summer! Typically, how I've made it work, I sit down and assess what I have and plan around that. Then, I make a grocery list based on what I need to make those meals. I have a marker board on the side of my fridge that is divided into "daily" slots so I just fill in what the meal plan for the day is. It works a lot better when I can have a marathon cooking day to prepare as much as possible ahead AND ALSO when I can schedule more than one week at a time.
I have done the "menu" several times and have failed miserably at it. Most mornings, I will take meat out of the freezer for that night's dinner. I do plan a menu when out of town guests are visiting (sort of). Most meal I prepare are simple. Guess it depends on the size of your family and your activities. :-)
