Taco Casserole

1 lb ground beef ($1.50)

1 package taco seasoning (FREE)

1 6 oz can tomato paste ($.20)

1 cup water (FREE)

1 can crescent rolls ($.75- think Pillsbury coupons!)

1 ½-2 cups crushed corn chips ($1)

1 cup sour cream ($.25)

1 cup cheddar cheese ($.25)

Assorted toppings of choice

Preheat oven to 375. Brown hamburger in skillet. Drain. Stir in taco seasoning, water, and tomato paste. Layer crescent rolls in bottom of 9x13 pan. Top with crushed corn chips. Spread sour cream over top of mixture. Top with cheddar cheese. Bake for 20-30 minutes, or until crescent rolls are cooked through and cheese is melted.

Total: $3.95

Sausage Potato Casserole

1 lb roll of sausage (I prefer Jimmy Dean Sage) ($.50)

1 medium onion, chopped ($,25)

1 can cream of mushroom soup (can substitute other creams) ($.50)

1 cup shredded cheddar cheese ($.25)

½ can evaporated milk (or ¾ cup milk) (FREE)

Salt and Pepper

3-4 potatoes, peeled and thinly sliced ($.15)

Preheat oven to 350. Brown sausage in skillet. Layer thinly sliced potatoes in the bottom of a 9x13 dish. Stir together remaining items, add to sausage. Pour over potatoes. Bake for 60-90 minutes, or until potatoes are tender.

Total: $1.65

BBQ BLT Chicken Salad

Ingredients:
1/4 cup reduced-fat mayonnaise
1/4 cup barbecue sauce
1 tablespoon lemon juice
1/2 teaspoon pepper
1/4 teaspoon salt
2 cups chopped cooked chicken breast
2 medium tomatoes, chopped
1 celery rib, sliced
5 cups torn salad greens
4 bacon strips, cooked and crumbled
Directions:
In a small bowl, combine the mayonnaise, barbecue sauce, lemon juice, pepper and salt. Cover and refrigerate for at least 1 hour. Just before serving, combine the chicken, tomatoes and celery; stir in dressing. Serve over salad greens; sprinkle with bacon.

4 Ingredient Chicken

Ingredients:

1 (2 to 3 pound) whole chicken, cut into
Pieces or 1 ½ pounds boneless chicken breasts
1/2 cup barbecue sauce
3 tablespoons grape, plum, or other jam
1 (1 ounce) package dry onion soup mix

Directions:

Preheat oven to 350 degrees.
In a medium bowl, combine the barbecue sauce, plum jam and onion soup mix. Place the chicken pieces in a 9x13 inch baking dish and pour mixture over the chicken, coating thoroughly.
Bake for about 1 hour (30-45 minutes if using boneless chicken), or until chicken juices run clear.

BBQ Chicken Bake

Ingredients:

3/4 cup barbecue sauce
3/4 cup honey
1/2 cup ketchup
1 onion, chopped
4 skinless, boneless chicken breast halves

Directions:

Preheat oven to 400 degrees.
In a medium bowl, combine the barbecue sauce, honey, ketchup and onion and mix well. Place chicken in a 9x13 inch baking dish. Pour sauce over the chicken and cover dish with foil.
Bake for 45 minutes to 1 hour, or until chicken juices run clear.

BBQ Chicken Bake

Ingredients:

3/4 cup barbecue sauce
3/4 cup honey

Directions:

Preheat oven to 400 degrees.

Bake for 45 minutes to 1 hour, or until chicken juices run clear.

Barbecued Asparagus

Ingredients:


1 cup water
1 pound fresh asparagus, trimmed
1/4 cup barbecue sauce


Directions:


In a large skillet, bring water to a boil; add asparagus. Cover and cook for 4-6 minutes or until almost tender; drain and pat dry. Cool slightly.
Thread several asparagus spears onto two parallel soaked wooden skewers. Repeat. Grill, uncovered, over medium heat for 2 minutes, turning once. Baste with barbecue sauce. Grill 2 minutes longer, turning and basting once.

Manhattan Meatballs

Ingredients:

2 pounds ground beef, chuck, or round
2 cups dry bread crumbs, crushed cornflakes, or crackers
2 eggs
1/2 cup minced onion
2 tablespoons chopped fresh parsley
2 teaspoons salt
1 cup barbecue sauce
1 1/2 (16 ounce) jars pineapple preserves

Directions:

Preheat oven to 350 degrees F (175 degrees C).
In a medium-size mixing bowl, mix barbecue sauce and pineapple preserves together.
In a medium-size mixing bowl, combine meat, breadcrumbs, eggs, onions, salt, and parsley. Mix well and form into bite-size balls. Arrange the balls in a single layer in a 9x13 inch baking dish. Pour the barbecue sauce mixture evenly over the meatballs.
Bake for 30 to 45 minutes, until the meat is cooked.
